Gluten Free Brownies

This Easter we had a good friend I have gotten to know through my work, for our family dinner on Sunday. Beth also came to a few of our Church services with us that weekend. It was a joy to get to know her better. A few of our family members (myself and Beth included) have health issues when we eat wheat so I made this recipe of Nana's. They are delicious... and very quick to whip up!




Gluten Free Brownies

1/3 Cup Butter (I used coconut oil)

2 squares unsweetened Chocolate

1 cup white Sugar

2 Eggs

1 tsp. Vanilla

2/3 cup white Rice Flour

1/8 tsp baking Powder

1/8 tsp. Salt

Melt chocolate and butter over low heat in a saucepan. Stir in sugar well and let sit for 5 minutes. Beat in eggs and vanilla and beat until light and fluffy. Stir together dry ingredients thoroughly and add to pan. Do not over stir.

Pour into well greased 8x8 pan. Bake at 350 degrees for 25 minutes or until they are pulling away from the edge of the pan. These freeze well.
