Best Banana Muffins



I have been looking for a healthy and tasty muffin recipe with lots of different types of things in them. I didn't find what I was looking for so last week I made up my own recipe with some interesting ingredients. Our whole family enjoyed them. Let me know what you think!

1 1/4 cups rice milk*

2 cups oats

Stir oats and milk in small bowl, let sit while you mix up the other ingredients.

Dry ingredients -

3 cups flour**

1/2 cup coconut

2/3 cups raisins

3/4 cup sucanet***

4 tsp. baking powder

2 tsp. baking soda

1 tsp. salt

Wet ingredients -

3 eggs

1/2 cup coconut oil - melted****

3 large bananas - mashed

1 small tin crushed pineapple - drained

1 tsp. vanilla

In a large bowl measure first 7 ingredients. Stir well to mix. Make a well in center.

In a small bowl beat eggs until frothy. Mix in coconut oil, bananas, pineapple and vanilla. Stir well and add oatmeal mixture, then stir into flour mixture in large bowl. Stir just until moist. Fill greased or paper lined muffin cups 3/4 full. Bake at 400° for about 21 minutes. Makes about 27 muffins


I made this recipe with substitutions in mind :) where the stars are in the recipe I have some ideas if you are making this recipe with common ingredients.


*cow or goat milk

**white or whole wheat flour

***1 1/2 cups white sugar

**** margarine, butter or olive oil
