Gingersnaps


3/4 cup Hard margarine (or butter), softened
1 cup Granulated sugar
1 Large egg
1/2 cup Fancy (mild) molasses
2 1/2 cups All-purpose flour
2 tsp. Baking soda
2 tsp. Ground ginger
1 tsp. Ground cinnamon
1/2 tsp. Salt

1/4 cup Granulated sugar, approximately

Cream margarine and first amount of sugar in large bowl. Add egg. Beat well. Add molasses. Beat until smooth.Combine next 5 ingredients in medium bowl. Add to margarine mixture in 2 additions, mixing well after each addition until no dry flour remains.


Roll into 1 inch (2.5 cm) balls. Roll each ball in second amount of sugar in small bowl until coated. Arrange about 2 inches (5 cm) apart on greased cookie sheets.

Bake in 350°F (175°C) oven for about 10 minutes until just firm. Let stand on cookie sheets for about 5 minutes before removing to wire racks to cool.

Makes about 4 dozen cookies.

A Surprised Soon To Be Bride!!!

Last Sunday my Mom and two good friends of hers and their daughters gave a surprise shower for a young lady that we know who will be getting married in June. Some of the men in our families came and helped us with setup and take-down. Thank-you so much for all of your help men!

She was given some wonderful gifts to help set up her new home!!

Big News!!!



Scott will be going to a local university this fall to continue his study of music. He will be taking the performance program in violin. This university is about an hour away from us so Scott should be able to come home most weekends.


We have been homeschooling the past 16 years plus. Scott has been working very hard to get to the level that he is now in music. He started his music studies in March 2005.


Please pray that he will find a nice place to stay and that all the plans will go smoothly getting ready for September.

I Got My G1!!!


Mom and I went yesterday to the driving center to get my G1!! After I had all the papers in hand Mom took me to a "lonely" road for my first drive! It was a lot of fun. It felt so weird to be in the driver seat after being a passenger for all these years. I have decided that I LOVE driving :) I bought my own ATV last year, but it's different then driving a car.

I was ready to take my G1 last year but the driving centers were on strike. I have it now :)

A "Surprising" New Look!!!

When I came home from NY I found a big surprise. My wonderful family had redone my room in a pretty "coconut cream". I had just gotten Mom and Dad's bed when they recently got a new bed so now I have a double bed! I love the size of it! Mom and I found a very lovely quilt from Sears. It has an old fashioned look to it. They gave me a pretty pot of tulips on my hope chest too :) It is beautiful. Now all I have to do is add pictures to the walls.

Roasted Pepper And Garlic Hummus


1 can chick peas, (19 0z/540 ml) RINSED and DRAINED

1\3 cup olive oil

3 Tbsp lemon juice

1/2 tsp salt

1/2 red pepper*

2 cloves garlic*

*Roast garlic and pepper together in oven at 350-400 approx 20-25 min until soft.

In food processor, combine chick peas, olive oil, lemon juice, garlic, salt and red pepper. Mix until very smooth. We use food processor or hand blender.

Makes about 2 cups. Freezes well.

We Were Off....

Caroline and I left the evening of March 29th, a Monday to go to NY. This is the picture that Mom took of us before saying goodbye at the airport. Our flight was delayed twice so we had lots of great catching up time. It was an amazing week and we made a lot of memories. I did not get any photos of the mission itself as I ended up leaving my camera in Rye NY (Caroline's house that she is staying at this year) Some of the other people got some nice pictures and a slide show. I will share the pictures with you when I get them. It's nice to have words, but pictures are even better!

Two Friends.......

Our last full day together Caroline and I were blessed to be able to go and spend a lovely couple hours at the beach about 15 min. from the house in Rye NY. We had a wonderful time and were able to capture some interesting and funny pictures.....
