Rhubarb Muffins

With the lovely and promising weather coming up this week I thought I would share a muffin recipe.

I make them with fresh or frozen rhubarb. They are crisp on the outside, tender and moist on the inside.

These muffins freeze well... if they last long enough!

- 1 egg

- 1 cup brown sugar (I used 2/3 cup sucanet)

- 1/2 cup shortening (I used coconut oil)

- 1 tsp. salt

- 1 cup buttermilk (I used rice milk with a bit of lemon juice)

- 1 1/2 cups diced rhubarb

- 2 cups flour (I used spelt flour)

- 1 tsp. baking soda

- 1 tsp. cinnamon

Beat the egg. Beat in brown sugar, shortening and salt. Stir in buttermilk, then rhubarb. Sift flour, soda and cinnamon together into the mixture. Stir only until all the flour is moistened. Spoon into 12 buttered or paper-lined muffin cups. Bake at 375 deg. for 20 minutes. If using frozen rhubarb cook a little longer.

I hope you all enjoyed the lovely warm - sunny day today! I was working 9-5. I had to put the air conditioning on around lunch time today though, because the chocolate was melting! My Grandmother (on my Dad's side) is here for a visit this weekend. She came yesterday and is staying 'till Tuesday.


We are going to be celebrating Dad's 50th Birthday and my Aunt Gwen and Uncle Robin's 25th Wedding Anniversary on Monday afternoon. We thought we would have a double party now that we have more things to celebrate with them living here. (smile)

Nana and Papa's 50th Wedding Anniversary is on August 5th. The family is having an evening party for them on Saturday, August 6th. We have been working on the invitations during the past week. Mom got them mailed out today after her and Nana addressed them together.

Goodbye Louise

Louise is going away for the summer doing a mission with "Crossroads Pro-life". Here is the link. I'll miss you Louise. May God richly bless you. I took a picture after our time together today. Here is Rosie, Tannis and Louise.

March For Life - Ottawa

On Thursday May 12th we went to the annual March for Life in Ottawa. We went on a bus with our church. A few people from other local churches came on our bus as well. We left Almonte at 8:15 in the morning to drive into the city. We went to Mass at St. Patricks Basilica first. After that the bus took us to the Hill to hear some speeches and singing. The March started at 1:30. Reports said approximately 15,000 in attendance. About 2500 more people then last year!

Scott

Scott had his violin jury this morning at school. It went well. Thank you everyone for your prayers over the past few weeks. We are all excited to have Scott coming home tonight.

Gardening

This morning I was working for a lady in Almonte weeding her flower gardens. I have been helping her for the past 3 years. After working there all morning I was inspired to go to the garden center to get some mulch and a few flowers to put in our little flower bed near our chicken coop. I'm looking forward to getting it all put together. When Scott gets home from school this week we are going to start working on the vegetable garden. How nice it is to see the sun shining!
